Breakfast Casserole

I made this for myself to act as both breakfast and lunch one day this past week. I had a week off work and wanted to experiment with something I hadn’t yet done. There was still enough left for hubby to have for his breakfast the next morning, so I’d say it would adequately serve between 3-4 people, depending on appetite and if you’re serving it with anything else.

Considering I’d not tried anything like this before and wasn’t entirely sure what to expect, it turned out pretty well! Kind of like quiche, but without the pastry. Or a really thick omelette done in the oven. Actually, considering the ingredients I guess that’s exactly what it is!!

Ingredients

4 large eggs
1/4 cup milk
4 sausages
2 to 3 tomatoes, chopped
1 small/medium onion, chopped
1/2 cup cheese, grated
2/3 tsp olive oil
Salt & pepper, to taste
Method

Preheat oven to 375 degrees / gas mark 5. Grease a medium sized casserole dish with cooking spray / butter.

If using frozen sausages, half defrost them in the microwave and then slice into bite size pieces. Add to frying pan with about 2/3 tsp olive oil and season with salt and pepper to taste. Fry until browned, then put aside and drain on some kitchen paper.

Chop tomatoes & onion. Grate cheese.

Add eggs and milk to a large jug or bowl and whisk until combined. Season with salt and pepper to taste.

Put sausages, tomatoes and onions into the casserole dish and mix until evenly distributed. Sprinkle cheese on top, and then pour egg mixture over.

Bake in pre-heated oven for 20-25 mins until firm and beginning to brown on top.
