This is one of my favourite go-to recipes for a quick, easy meal. I usually have tortilla wraps in the freezer and you can pretty much put any ingredients you like in the middle. It’s especially good for using up veggies and bits and bobs in your fridge.
These calzones are tuna, tomato & baby spinach, so I’ll write the recipe for that, but feel free to alter it to have whatever the heck you like… One tin of tuna makes around 3 calzones, so this recipe covers that. But again, it’s incredibly easy to adapt to however many hungry mouths you need to feed!
Ingredients
3 tortilla wraps
1 tin tuna, drained
1/4-1/2 tsp black pepper (or to taste)
1 1/2 tsp lemon juice (bottled is fine)
1 medium tomato, diced small
Small handful of baby spinach per calzone
Small handful of grated cheese per calzone (we use whatever is in the fridge – was Wensleydale this time and was super yummy!)
3/4 tbsp tomato puree per calzone
2 tbsp olive oil per calzone
Mixed herbs, to taste
Method
Put drained tuna, diced tomatoes, black pepper and lemon juice into a jug/mixing bowl and mix well.
Run tortilla wraps under water so they are slightly moist – this helps them stick together.
Spread tomato puree all over one side of your wraps and then sprinkle on some mixed herbs.
Put half of your cheese down on one side of each wrap, then some of the tuna mixture, then baby spinach and finally the rest of your cheese.
Fold half of your wrap over the filling and press down on the edges. If it is not sticking well, wet your fingers and run them along the edges to get the wrap to stick together. Make sure you don’t overfill – you don’t want it to be too full otherwise it will burst open during cooking.
When your wraps are assembled, heat up your oil in a large frying pan and then fry your calzones one at a time, about 1 minute on each side or until golden brown.
